The shelf basics

Dry goods

  • Short pasta, chickpeas, lentils, and one good bag of medium-grain rice.
  • Masa harina stays sealed and gets replaced before it smells flat.
  • Breadcrumbs are kept only if they are still dry enough to toast well.

Fridge door

  • Dijon, soy, fish sauce, capers, and chili crisp.
  • Open jar of preserved lemon if there is no fresh lemon around.
  • A small squeeze bottle of neutral oil for pans and sheet trays.

Ratios I forget unless they live here

Crepes Thin enough to run instantly when the pan is tilted, but not watery on the edges.
Piccata finish Acid first, butter last, capers off heat if I want them to stay bright.
Sesame greens Paste loosened with hot liquid before it ever touches the pot.
Bean freeze packs Cool completely, then freeze flat in portions that can turn into one lunch or one lazy dinner.
